Crockpot Recipe for Polish Cabbage Rolls

I was thinking and thinking that it was time for another recipe and I checked my Meal Master Database and came up with this one. It was my Mom's recipe that she got from a polish family that we lived with for a while when I was in school. She made it for years and I adapted it recently for the crockpot, which I love to use.

The actual name of the recipe is Galumpkies, but being scotch/english, I can't say it and had to look it up in the dictionary just to spell it correctly here. :) Anyway, here is the recipe. Enjoy it.

Title: Polish Cabbage Rolls
Categories: Cabbage, Crockpot
Yield: Depends on your appetite

1 Green cabbage
1 lb Ground beef, browned
1/4 c Uncooked rice
1 Egg, beaten
1 Onion, minced
1 Carrot, minced - if desired
1 ts Salt
1/2 ts Pepper
1/4 c Cider vinegar
1/2 c Brown sugar
8 oz Can tomato sauce

Mix ground beef, rice, egg, onion, carrot, salt and
pepper. Mix together vinegar, brown sugar and tomato
sauce.

Drop cabbage in boiling water for 5 to 10
minutes. Remove 10 large leaves. Chop remaining
cabbage. Place in bottom of crock pot. Place 2 to 4
tablespoons of meat mixture in center of each leaf.
Roll up, tuck in sides and finish rolling and use
toothpick to hold. Place seam side down in crock pot.
Pour on tomato mixture.

Cover and cook on low for 8 to 10 hours. Serves 6 to 8.

Sounds delicious! I was just starting to think about crock pot recipes since it will be back to regular teaching schedule in a few weeks. It's so nice to come home to a meal ready to serve.
