Just Keeping in Touch....

Not much going on right now.  I'm in between finishing one quilted wall hanging and wondering how to quilt it and starting a Christmas Paper Pieced Table Runner.  Nothing to show you right now.  The knitting is at the same standstill, but I have started a pair of knitted fingerless gloves on two straight needles and they look pretty good.  Pictures when they are done.  I'm making them because the office is very cold in winter and I can't work with such cold hands.  Thought these little wonders would be a big help.

So the only thing I can offer is a recipe.  Plenty of  those to share, believe me.

Here you go, another favorite.  Chicken Drumsticks.  Always had trouble making these, Crock Pot made them overdone, oven made them too dry.  Oh dear, what to do......

Finally came across this recipe and have made it ever since.  Crispy on the outside and tender on the inside.  I know they use a lot of butter, but that is what makes them so good!  Try them.  They really are worth making.

Butter Baked Wings and Drumsticks
Sorry no picture.  I'll take one the next time I make them which should be sometime this week.

Chicken drumsticks & Wings, as many as you want
2 ts Salt
1/4 t Pepper
2 c Cracker Crumbs
1 ts Poultry Seasoning
1 c Butter, melted

Sprinkle chicken parts with salt and pepper.

Combine crumbs and poultry seasoning. Dip chicken in butter, then roll in crumbs to coat well.

Place chicken pieces on foil-lined pan and drizzle with any remaining butter.

Bake at 375 degrees for 30 to 60 minutes or until tender and reaches an internal temperature of 160
degrees.

Cooks' notes:
1.  I took off the skin from the drumsticks before coating. I had 5 medium sized pieces and I cooked it for 50 minutes. Shut the oven off and left the chicken in until dinner was ready to serve. Came out moist and tender.
2.  Save yourself some time and put the cracker crumb mixture in a large plastic ziploc bag and drop those babies in a few at a time.  Shake well and place in your pan.  So much easier and less messy than dip and roll, dip and roll, etc. : D

YUMMMM!! I bought my chicken this morning and plan to make this for dinner tonight. I'll let you know how it comes out.
