Cranberry Cake

Hi there, glad you stopped by.  Did you smell me cooking?  Did you smell the wonderful aroma of  baking cake?  Well it did smell good believe me and the cake was worth the baking.  It's a new recipe for me brought to NC from Texas.  It's called Cranberry Cake and has the most fantastic warm Vanilla Sugar sauce to serve with it.  But the biggest thing is that it is a SSP.

And here's the recipe:

Cranberry Cake

3 tsp. Melted Butter
1/2 cup Water
1/2 cup Evaporated Milk
1 cup Sugar

1 tsp. Salt
2 tsp. Baking Soda
2 cups Flour
3 cups of Whole Cranberries

Stir the dry ingredients in a medium size bowl and set aside. 

Stir the butter, water and evaporated milk until blended; add the dry ingredients and mix well.  Fold in the cranberries.

Bake at 350 degrees for 35 to 45 minutes in a 9" x 13" pan slightly sprayed with Pam or Baker's Spray. 

Serve warm with the following Vanilla Sugar Sauce:

Blend together 1/2 c butter, 2 cups sugar, and 1 cup evaporated milk in a saucepan.  Bring to a boil, then add 2 tsp. vanilla extract.  I let the sauce cook just a bit to thicken it up a bit.

I cannot tell you how much we enjoyed this cake and sauce. 

Oh and buy the way....if you got this far....are you wondering what SSP stands for?  "Super Simple Project"
